MEXICAN CHICKEN WITH SALSA

I absolutely love this dish. I always feel so refreshed after eating it because it has the zingy lime salsa which is also so healthy! Plus all the flavours go so well together, and it can be made in advance and it is super easy! What more could you want?

MEXICAN CHICKEN:

Ingredients: 2 servings 

Chicken breast

A carrot

A pepper

1 packer of microwave rice

Tomatoes

A lime

  1. Dice the peppers and tomatoes and grate the carrot and put in a bowl with the juice from the lime.
  2. Split the chicken breast in half and start frying it off in oil.
  3. Start the rice in the microwave when the chicken is almost done.
  4. Put the rice on the plate and top it with the chicken and the salsa.
